Single Origin – Organic Medium Roast. Tasting Notes: Praline, Baked Apple, Sweet Citrus.

This coffee comes from the CODECH cooperative in the Huehuetenango region of Guatemala. Founded in 2000, the CODECH co-op is dedicated to developing coffee production in areas that lend themselves well to organic production and environmental sustainability. CODECH places a high importance on utilizing agricultural technicians to educate their members through training and demonstrations in the field, coupled with internal inspectors who ensure that the proper processes are being followed. This is no small feat as CODECH has a strong membership of 476 people dedicated to growing organic coffee.

While CODECH produces thousands of bags of coffee every year, this lot comes from the women members of CODECH who make up an impressive 40% of the membership. As they are harvesting, their coffee is separated from the rest of the community lots so that it can be certified with the “Manos de Mujer” seal. This allows them to be paid an additional premium on the coffee that they can decide how to use for their community. As a group, they have decided to use half of the proceeds from this premium for healthcare programs and workshops aimed at lowering the high infant mortality rate in the region.

We were thrilled when we tasted the first samples of this coffee this year and are very excited to be sharing it with you. You’ll find familiar notes of praline paired with a sweet citric acidity and a silky medium body.
